  • 50 whole wheat hoagie buns
  • 150 slices (6.5 lbs.) Shady Brook Farms® Sliced Turkey Ham (3 slices per sandwich)
  • 50 oz. shredded lettuce
  • 100 slices tomato (2 per sandwich)
  • 50 oz. mayo (alt: mayo/mustard mixture)


  1. On a sheet tray, lay out bottom hoagie buns.
  2. Spread on 1 ounce of mayo down the center; shingle on turkey ham, shredded lettuce and tomato.
  3. Chef Tip: Store mayo in squirt bottle to simplify prep!
  4. Finish sandwiches with top half of hoagie bun and serve.
